Nobody Knows the Truffles I've Seen Salad (recipe courtesy of Maille)

Ingredients:

  • 1 pound waxy potatoes
  • 6 ounces fresh truffles
  • ½ lemon
  • 2 Tbsp butter
  • 6 ounces lamb's lettuce or frisée
  • 3 Tbsp hazelnut oil
  • 1 Tbsp groundnut (or walnut) oil
  • Salt and pepper to taste

    Directions:

  • Wash the potatoes and cook in boiling salted water for 10 minutes.
  • Soak the truffles in warm water for a few minutes. Clean them thoroughly under cold running water, using a sharp knife to scrape off any grit. Cut into fine slices.
  • Squeeze the lemon.
  • Cut the potatoes into ¼-inch thick rounds (do not peel them).
  • Melt the butter in a skillet and fry the potatoes for about 5 minutes or until golden, turning them over halfway.
  • Wash and dry the greens and divide between individual plates. Put the potatoes on top and cover with the truffles.
  • Combine the oils and lemon juice and season with salt and pepper. Pour the dressing onto the salads and serve.

    An incomparable side-dish

    Serve with cold meat platter.

    Difficulty level: Easy.
