Caesar Salad

Serves six

This is a lighter-tasting version of a Caesar Salad. You can add anchovies and an egg, if you prefer.

Dressing Ingredients:

  • 3 cloves of garlic (chopped finely)
  • 1 Tbsp of wine vinegar
  • 1 tsp of lemon juice
  • 1 Tbsp of Dijon mustard
  • 4 Tbsp of olive oil
  • 4 Tbsp of Parmesan cheese (grated)
  • salt and pepper
  • 2 bunches of Romaine lettuce
  • 1/4 lb parmesan cheese (shred)
  • Herbed Croutons -- if you like, try the "matching" recipe, which you'll find here...

    Directions:

    Prepare Dressing: In a medium bowl mix together the wine vinegar, lemon juice, Dijon mustard and garlic. Whisk until well blended, then add the olive oil. Drizzle in the olive oil -- while whisking -- until thoroughly blended. Mix in grated Parmesan cheese, salt and pepper.

    Wash the Romaine lettuce and dry well. Tear into bite-size pieces and toss with dressing. Garnish with Parmesan cheese curls and croutons.

    Difficulty level: Easy.
