tested by Anne Garber This recipe (and its sister, recipe 1) earned the distinction of being the most e-mailed recipe in the past month, and something like the fourth-highest ever. (Serves eight to 12 people)
Directions: Heat oven to 375 degrees F and position rack in upper third of oven. Use 1 tablespoon butter to thickly grease a 9-by-13-inch baking dish. Combine grated cheeses and set aside two heaping cups for topping. In a large bowl, toss together the pasta, cheeses, cayenne and salt to taste. Place in prepared pan and evenly pour milk over surface. Sprinkle reserved cheese on top, dot with remaining butter and bake, uncovered, 45 minutes. Raise heat to 400 degrees F and bake 15 to 20 minutes more, until crusty on top and bottom. Our evalu8'tion: This recipe is remarkably easy, even if the ingredients are guaranteed to go directly to the blood vessels supplying your heart. This version is slightly creamier than the other one, but it's still excellent. Difficulty level: Easy.
